Paleo Treats Water Skid

A water treatment skid being built for Paleo Treats (3275 Adams Ave, Ste A, San Diego CA 92116) to give their coffee shop a real competitive advantage on water quality.

The core idea: take any drinking water source — municipal, well, whatever — clean it down to a "blank slate" (TDS < 10 ppm via reverse osmosis), then precisely dose minerals back in to fully express the flavor of a given coffee. Eventually the skid will be productized and made available to other coffee shops.

Dosing minerals

  • Magnesium Sulfate
  • Calcium Chloride
  • Sodium Bicarbonate

The system has to be robust, meet every regulating agency standard, and be easy enough that a barista with minimal training can use it day-to-day. It needs to produce both espresso water and pourover water on demand.

Aspects of water for coffee

  • pH
  • Hardness
  • Alkalinity
  • TDS (total dissolved solids)

How to use this site

  • System Specs — the engineering documents (full system, tanks, metering pumps, BOM)
  • Progress — where we are right now and what's next
  • Water Recipes — reference mineral profiles from the coffee community
  • Regulatory — San Diego County source documents we're designing against

Every page shows when it was last updated (bottom of page). The site rebuilds and redeploys automatically every time the underlying docs are pushed to GitHub, so what you're reading is always current.
